Pinkglow® Bread Pudding

Ingredients: 

  • 4 tablespoons unsalted butter, melted 
  • 1 1/4 cup sugar 
  • 4 eggs, beaten 
  • 1 1/4 cup milk 
  • 2 cups diced PinkGlow Pineapple, divided 
  • 1/3 cup pineapple juice 
  • 5 cups stale Brioche bread cubes 
  •  

Directions: 

  1. Preheat oven to 325F.  
  2. In a large bowl, combine melted butter and sugar. Add eggs and milk and whisk well. 
  3. Add 1 1/2 cups diced PinkGlow Pineapple and pineapple juice. Stir well. 
  4. Gently add in bread cubes, lightly stirring until combined. 
  5. Transfer bread mixture to a greased 9x13 casserole pan. Bake for 50 minutes, until golden brown.  
  6. Top with remaining 1/2 cup diced PinkGlow Pineapple and serve.
