Pinkglow® Bread Pudding
Ingredients:
- 4 tablespoons unsalted butter, melted
- 1 1/4 cup sugar
- 4 eggs, beaten
- 1 1/4 cup milk
- 2 cups diced PinkGlow Pineapple, divided
- 1/3 cup pineapple juice
- 5 cups stale Brioche bread cubes
Directions:
- Preheat oven to 325F.
- In a large bowl, combine melted butter and sugar. Add eggs and milk and whisk well.
- Add 1 1/2 cups diced PinkGlow Pineapple and pineapple juice. Stir well.
- Gently add in bread cubes, lightly stirring until combined.
- Transfer bread mixture to a greased 9x13 casserole pan. Bake for 50 minutes, until golden brown.
- Top with remaining 1/2 cup diced PinkGlow Pineapple and serve.
