Pinkglow® Pineapple French Toast Casserole
Ingredients:
For the french toast casserole:
• 12 Hawaiian sweet rolls
• 6 eggs
• 1 ½ cups milk
• ¼ cup granulated sugar
• 1 teaspoon vanilla extract
• 1 PinkglowⓇ Pineapple, finely chopped (reserve ½ cup of chopped pineapple for topping)
For the crumble topping:
• 1 cup all-purpose flour
• 1 cup light brown sugar
• 8 tablespoons butter (softened)
• ½ cup chopped PinkglowⓇ Pineapple
Directions:
To make the french toast casserole:
- Preheat the oven to 350 degrees.
- Grease a 9x13 pan and set aside.
- Cut each hawaiian roll into 4 pieces and evenly spread the rolls throughout the bottom of the greased 9x13 pan.
- In a medium bowl, whisk eggs, milk, vanilla extract and sugar together until well combined.
- Pour the egg mixture over the rolls, evenly covering all of the bread.
- Finely chop the entire PinkglowⓇ Pineapple, reserving ½ cup of pineapple for topping the casserole later.
- Evenly spread the pineapple (minus ½ cup) over the top of the bread and eggs. Set aside.
To make the crumble topping:
- Use a fork to roughly combine the flour and brown sugar in a medium bowl.
- Chop up the softened butter into small pieces and add it to the flour and sugar mixture.
- Use a fork or your fingers to incorporate the butter into the dry ingredients. Work the mixture until it is crumbly and no unincorporated butter remains.
- Sprinkle the crumble mixture evenly over the top of the casserole.
- Sprinkle the reserved pineapple over the top, then bake for 40-50 minutes or until the top has begun to brown.
- Remove from the oven and allow it to set for 15 minutes before serving. Top with powdered sugar, maple syrup, whipped cream or fresh pineapple!
